I had some left over roasted courgettes to use up today (roasted with mixed herbs, ground coriander, ground cumin, black pepper and olive oil) and I have just mixed them with some feta cheese, chickpeas, butter beans and mint. I have dressed it with some olive oil and lemon juice and I am about to dive in! Very easy summer salad for when the sun comes back! 🌞🌞🌞😉 #summersalad #leftovers
